Weekend and Zucchini Pizza

Well not much to say about this past weekend, because it consisted of work both Saturday and Sunday. Working on the weekends really is the pits. However, I did treat my self to some good food! Friday I tried the new Autumn Squash Soup at Panera. So good! Then Saturday night I went to a Halloween Party where I indulged in some yummy treats. On Sunday, I made one of my favorite recipes, Zucchini Pizza! I found this recipe a few years ago on the Eat Live Run blog, and have been making it ever since. I’ll share it with you below and you can try it for yourself.

Zucchini Pizza

Ingredients

-Pizza Crust: I typically use a whole-wheat dough thats pre-made, but feel free to substitute your favorite homemade dough as well.

-1 Large Zucchini

– 2 tsp of minced garlic

– 1 cup part-skim ricotta cheese

– 2 cups  part-skim mozzarella cheese

– dash of salt

– dash of pepper

– dash of red pepper flakes

Directions
1) Pre-heat oven to 450 F
2) Using a grater, grate the zucchini onto a large plate and press with paper towels to soak up the liquid.
3) In a small bowl, mix the zucchini with the mozzarella cheese, and add salt and pepper to taste.
4) In a separate small bowl, mix the ricotta cheese and garlic.
5) Flatten out the pizza dough onto a stone or baking dish.
6) Spread the ricotta mixture onto the dough.
7) Add zucchini mixture.
8) Sprinkle with red pepper flakes to taste.
9) Place in oven, bake for approximately 15 min or until crust is browned.
10) Eat and enjoy!
