Well not much to say about this past weekend, because it consisted of work both Saturday and Sunday. Working on the weekends really is the pits. However, I did treat my self to some good food! Friday I tried the new Autumn Squash Soup at Panera. So good! Then Saturday night I went to a Halloween Party where I indulged in some yummy treats. On Sunday, I made one of my favorite recipes, Zucchini Pizza! I found this recipe a few years ago on the Eat Live Run blog, and have been making it ever since. I’ll share it with you below and you can try it for yourself.
-Pizza Crust: I typically use a whole-wheat dough thats pre-made, but feel free to substitute your favorite homemade dough as well.
-1 Large Zucchini
– 2 tsp of minced garlic
– 1 cup part-skim ricotta cheese
– 2 cups part-skim mozzarella cheese
– dash of salt
– dash of pepper
– dash of red pepper flakes
