Since this months What I Ate Wednesday is all about snacks of the season, I thought I would share my new favorite one with you, Pumpkin Pie Dip.
1-15oz can pumpkin purée
1-6oz container fat-free vanilla Greek yogurt
4oz or 1/2 container light cool whip
3 tsp pumpkin pie spice
1/4 cup brown sugar (optional or can substitute with 2-3 packets of Splenda)
Combine all ingredients in a medium size bowl.
Chill overnight it serve immediately with apple slices, graham crackers, etc
This is seriously my new favorite snack! I have eaten the past two days with apples and whole wheat tortillas with cinnamon. Not only is it easy to make, but it’s also a healthy pumpkin alternative compared to pumpkin pie. Plus it only costs about $0.50 per serving. Definitely will be making this recipe again. Mmmm.
Other eats for the day include:
Breakfast: Oatmeal (Pumpkin Butter + Pecans + Pumpkin Granola)
Snack: Trail Mix
Lunch: Salad with Tuna + Pumpkin Pie Dip 🙂
Dinner: Homemade Chicken Pot Pie
Snack: Pumpkin Pie Dip with Apple/Toasted Whole Wheat Tortilla
