Breakfast: Plain Jane bowl of oats. Just 1/2 cup old fashioned oats + 1 1/2 cup water.
Lunch: Baked Pasta + Trader Joe’s Meatless Meatballs (SO good!) + a little vegetable salad on the side
Pre-run Snack: Smoothie with Banana + Spinach + Frozen Mixed Berries + Skim Milk
Dinner: Mexican Skillet = Brown Rice + Black Beans + Spinach + Green Peppers + Onions and then Topped with Mexican Blend Shredded Cheese
