Tofu Fingers and Sweet Potato Chips

I love experimenting with food and finding new recipes. I stumbled upon a recipe for breaded tofu here, and decided that I wanted to give it a try. Tofu is a great alternative to meat, and honestly you will not miss the meat in this dish if you are a meat lover, promise. So if you are ready to experiment and find a new weekly dish, I suggest trying this one out….Tofu Fingers + Sweet Potato Chips!

Ingredients

1 (8oz) Block of Extra Firm Tofu

~ 1 cup Seasoned Bread Crumbs (may need more or less depending how much breading you put on each stick, I didn’t actually measure out how much I used but I estimated it to be around a cup)

1 Egg

Directions

Preheat oven to 375 F

Take tofu out of package; Either place in a tofu press, or wrap in a paper towel + place on a plate + stack a canned good (or something with some weight) on top to drain out the excess water. Let the tofu drain for 15-20 min.

After draining cut the tofu into strips. I cut the block’s width in half, and then cut each half into 8 strips.

Set up your breading station assembly line. Beat egg with whisk and place in bowl at station one. Pour breadcrumbs into bowl and place at station two. Place a baking sheet sprayed with non-stick spray at station three.

Dip tofu stick in egg, then bread crumbs, then place onto baking sheet. Repeat until all tofu sticks are breaded.

Place in oven and bake for 12 min. Flip, and bake for an additional 12 min.

Let cool and enjoy, with a side of ketchup if you so choose 🙂

I baked a side of Sweet Potato Chips to enjoy with my Tofu Fingers. For the Sweet Potato Chips you need:

Ingredients

1 Sweet Potato or Yam

~ 1 tbsp Olive Oil

Dash of Salt and Pepper (or seasoning of your choice)

Directions

Preheat oven to 375 F.

Rinse and dry sweet potato.

Do not peel! (the skin provides fiber) Just slice the sweet potato into circles like chips.

Place all the sweet potato chips into a bowl. Add olive oil, salt, pepper, and/or seasoning and mix.

Place chips spread out on a baking sheet.

Bake for 12 min. Flip, and repeat for an additional 12 min. This makes the “chips” softer. If you want them to be crisper, just cook for additional minutes with your eyes on the oven to make sure they do not burn.

The sweet potato chips also go well with a side of ketchup, Enjoy!
